4 servings
50 calories/serving
¾ c. cup baking apples (Pippin or Granny Smith)
¼ c. fresh or frozen blueberries
1 tsp. Whole wheat flour
1 T. agave or honey
½ tsp. Cinnamon
1 sheet filo
Wash, quarter, core and slice the apples very thinly. Place in a small bowl. Toss the apples with the cinnamon and flour. Drizzle agave over the top and toss to mix.
Place one sheet of filo dough in front of you and fold length wise. Place apple mixture across the end of the filo dough closest to you. Roll like a jelly roll and place on a cookie sheet sprayed with non stick spray.
Brush the top with apple juice concentrate and spray briefly with butter spray. Bake at 350 degrees for approx. 15-25 minutes, until top is browned and apples are soft.
Cut each roll into 4 pieces and serve with a dollop of non-fat vanilla yoghurt.
