Chilled Beet Borscht

Ingredients

16 ounces canned beets, with juice

¾ cup buttermilk

1/3 cup nonfat sour cream

1 tablespoon orange juice, frozen concentrate

1 teaspoon onion, chopped


Directions

Combine all ingredients in food processor, reserving 2 tablespoons of sour cream.

Process smooth and serve in chilled bowls with a dollop of sour cream.

NOTE:  The calories are figured for a half cup serving.  You can have a whole cup and still be under 100 calories.  This would actually be a very good main dish for lunch.  We serve it as a first course soup at The Oaks and everyone likes it!
