Apple Chutney


Makes 32 one tablespoon servings, 15 Calories per serving

INGREDIENTS
  • 2 C. APPLE, 1/4 INCH DICED
  • 1/4 C. DATES, CHOPPED
  • 1/4 C. RAISINS
  • 1/4 TSP. CORIANDER
  • 1/4 TSP. CUMIN
  • 1/2 TSP. GARLIC, MINCED
  • 1/2 TSP. FRESH GINGER, MINCED
  • 1/4 C. APPLE CIDER VINEGAR
  • 1/4 C. APPLE JUICE CONCENTRATE
  • 1/4 C. WATER

PREPARATION
  • Combine all ingredients in a sauce pan and stir over low heat until liquid is absorbed and apples are tender.

  • # TO MICROWAVE: Combine all ingredients in a 2 quart glass bowl, HALVING THE LIQUID. Microwave for 5 minutes; stir and cook for another 5 minutes. Then stir and check for texture. # Cover Chutney and chill.

  • Serve with Indian food and/or rice.

NOTE: This is an extremely simple chutney. You may find that you enjoy the flavors so much that you will use it as a flavor enhancer for many foods. Try it with poultry instead of cranberry sauce. DELICIOUS
